Clover Classic Mixed Bean Chilli

A chilli con carne without the carne! A quick and easy dinner.

Ingredients:

1 tbsp oil
1 red onion, chopped
1 red pepper, chopped
1 green pepper, chopped
2 cloves garlic, chopped
1 tbsp chipotle spice
1 tbsp ground cumin
2 tins mixed beans, rinsed and drained
1 tin chopped tomatoes
pinch of sugar
½ cup vegetable stock
Salt and pepper to taste
Handful fresh coriander, chopped
1 cup Clover Classic Dairy snack for serving
Mini tortillas for serving

Method:

Heat the oil in a large saucepan and add in the chopped onion. Sauté for a minute, then add in the chopped peppers, garlic and spices. Cook for 2 minutes then stir in the beans and chopped tomatoes. Pour in the stock, season with salt, pepper and sugar and allow to simmer for 10-15 minutes.
Stir in the coriander and serve warm with Clover Classic dairy snack

Chefs Tip: This is a great recipe to double up and freeze to use as a quick meal solution.
