Protein Wrap Muffins Two Ways
Savory or sweet? Why not both?

Ingredients:
- Base
- 3 large white wraps
- 6 eggs
- 1/4 cup smooth cottage cheese
- Salt
- Savoury
- 4 beef bangers, cooked and chopped
- 1/2 cup Cheddar cheese, cubed
- 1 tablespoon paprika
- 1.2 cup spinach (wilted and cooled)
- Sweet
- 3 tablespoons maple syrup
- 1 teaspoon vanilla essence
- 1/2 cup blueberries
- Garnish
- 1 tablespoon chopped chives
- 2 Table spoon icing sugar.
How To Make Protein Wrap Muffins Two Ways
- Place the wraps on-top of each other and roll up into a spiral, cut the wrap into 6 parts. Place the rolled cut wraps into a greased muffin tin. In a large jug, whisk together the eggs, cottage cheese and salt. Divide the egg mixture into two.
- Savoury: pour the egg mixture over 3 of the cut wraps, push the cheddar cubed into the center of the rolled wraps, top with the chopped beef bangers, wilted spinach and sprinkle with paprika.
- Sweet: to the reserved egg mixture, add in vanilla essence and maple syrup. Mix well.
- Pour the sweet mixture over the remaining cut wraps. Top with blueberries and bake at 180C for 20 minutes.
- Once cooked and slightly cooled, garnish the savoury muffins with chopped chives and the sweet version with icing sugar.
