Rib Eye Steak Sandwich with Caramelised Onions

Ingredients:
For the Steak
- 2 rib-eye steaks (about 250–300g each)
- 1 tbsp olive oil
- Salt and cracked black pepper
- 1 tsp smoked paprika (optional)
- 1 tsp garlic powder
for the Caramelised Onions
- 2 large onions, thinly sliced
- 2 tbsp butter
- 1 tbsp olive oil
- 1 tbsp brown sugar
- 2 tsp balsamic vinegar
- Pinch of salt
for the Sandwich
- 4 ciabatta rolls OR 4 thick slices sourdough
- 4 tbsp mayonnaise
- 1 tbsp Dijon mustard
- 1 cup rocket or mixed greens
- 4 slices matured cheddar or provolone (optional)
How To Make Rib Eye Steak Sandwich with Caramelised Onions
- Prepare the Caramelised Onions
- Heat the butter and olive oil in a pan over low heat.
- Add the sliced onions and a pinch of salt.
- Cook slowly for 10–12 minutes, stirring occasionally.
- Add the brown sugar and balsamic vinegar.
- Cook for another 5–7 minutes until deep golden and sticky.
- Set aside.
- Cook the Rib-Eye Steaks
- Pat steaks dry, then rub with olive oil, salt, pepper, paprika, and garlic powder.
- Heat a pan or griddle pan on high.
- Sear steaks for 3–4 minutes per side for medium-rare (adjust to preferred doneness).
- Remove from the heat and rest for 5 minutes.
- Slice thinly against the grain.
- Toast the Bread Slice the ciabatta or sourdough and toast lightly in the same pan for extra flavour.
- Assemble the Sandwich
Mix mayo and Dijon mustard; spread onto each slice or roll. - Layer rocket/mixed greens at the base.
- Add slices of rib-eye steak.
- Spoon over a generous amount of caramelised onions.
- Add cheese if using and close the sandwich.
