Steak Fajitas

Ingredients:
For the steak & marinade
- 500g flank steak or skirt steak (sirloin also works)
- 2 Tbsp olive oil
- 2 Tbsp lime juice (fresh)
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tsp chili powder
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp dried oregano
- Salt & pepper to taste
For the vegetables
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- 1 green pepper, sliced
- 1 medium onion, sliced
- 1 Tbsp olive oil
- Salt & pepper
For serving
- Warm tortillas
- Fresh coriander
- Lime wedges
- Guacamole
- Sour cream
- Salsa
How To Make Steak Fajitas
- In a bowl, mix together oil, lime juice, cumin, paprika, chili powder, garlic powder, onion powder, oregano, salt, and pepper.
- Coat the steak well and let it marinate for at least 20 minutes.
- Heat a cast-iron pan or griddle over high heat until very hot.
- Add a little oil and sear the steak for 3–4 minutes per side (medium-rare) or longer to your liking.
- Remove from heat, rest for 5 minutes, then slice against the grain into thin strips.
- In the same pan, add 1 tbsp oil.
- Add the sliced peppers and onions.
- Season with salt and pepper.
- Sauté until softened and slightly charred (about 5–6 minutes).
- Add the sliced steak back into the pan with the vegetables and toss together for 1 minute to warm through.
- Spoon fajita filling into warm tortillas.
- Top with coriander, lime juice, guacamole, sour cream, or salsa.
