Roast Leg of Lamb with Seasoned Vegetables
A succulent leg of lamb perfect for a big occasion!

Ingredients
- 2kg Leg of lamb
- 2 Tbsp olive oil
- 4 garlic cloves, chopped
- 4 – 5 rosemary sprigs
- ½ cup lamb rub or seasoning of your choice
- 500g butternut, cubed
- 4 potatoes, peeled and cut into quarters
- 4 carrots, peeled & cut into chunks
- 3 Tbsp vegetable seasoning of your choice
- salt & pepper
- To serve:
- gem squash
- basmati rice
How To Make Roast Leg Of Lamb
- Preheat your oven to 200°. Combine olive oil, garlic, rosemary, lamb rub seasoning, salt & pepper in a bowl, then rub the mixture over the lamb. Place the lamb into a large baking tray.
- In a separate bowl add carrots, potatoes, butternut. Drizzle over some olive oil and vegetable seasoning, then mix until well combined.
- Place the vegetables around the lamb, cover with foil and bake in oven for 40 minutes, then remove foil and allow it to roast in the oven for 35 minutes.
- Once the lamb is cooked and vegetables are tender remove from the oven and allow the lamb to rest for 15 minutes before slicing.
- Serve lamb on a large platter with roasted vegetables, basmati rice and gem squash on the side.
