Roast Leg of Lamb with Seasoned Vegetables

A succulent leg of lamb perfect for a big occasion!

Ingredients

  • 2kg Leg of lamb
  • 2 Tbsp olive oil
  • 4 garlic cloves, chopped
  • 4 – 5 rosemary sprigs
  • ½ cup lamb rub or seasoning of your choice
  • 500g butternut, cubed
  • 4 potatoes, peeled and cut into quarters
  • 4 carrots, peeled & cut into chunks
  • 3 Tbsp vegetable seasoning of your choice
  • salt & pepper
  • To serve:
  • gem squash
  • basmati rice

How To Make Roast Leg Of Lamb

  1. Preheat your oven to 200°. Combine olive oil, garlic, rosemary, lamb rub seasoning, salt & pepper in a bowl, then rub the mixture over the lamb. Place the lamb into a large baking tray.
  2. In a separate bowl add carrots, potatoes, butternut. Drizzle over some olive oil and vegetable seasoning, then mix until well combined.
  3. Place the vegetables around the lamb, cover with foil and bake in oven for 40 minutes, then remove foil and allow it to roast in the oven for 35 minutes.
  4. Once the lamb is cooked and vegetables are tender remove from the oven and allow the lamb to rest for 15 minutes before slicing.
  5. Serve lamb on a large platter with roasted vegetables, basmati rice and gem squash on the side.
