Ryle's Bobotie

Bobotie, straight from the heart, and dripping in the good stuff!

Serves: 4–6

Ingredients:

Meat Mixture:

  • 2 tbsp oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 kg beef mince
  • 2 slices white bread
  • ½ cup milk (for soaking the bread)
  • 2 tsp mild curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • ½ tsp ground cinnamon
  • Salt and black pepper, to taste
  • 2 tbsp malt vinegar (or apple cider vinegar)
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 4–5 tbsp Mrs. Ball’s Original Chutney
  • 2 tbsp raisins or sultanas (optional but traditional)
  • 1 small apple, grated (optional but adds lovely sweetness)

Topping:

  • 2 large eggs
  • Reserved milk from the soaked bread (about ½ cup)
  • 4–6 bay leaves

How To Make Ryle’s Bobotie

  1. Start by preheating your oven to 180°C (350°F).
  2. While the oven heats, place 2 slices of white bread into a bowl with ½ cup of milk to soak.
  3. Set this aside while you prepare the meat.
  4. In a large, deep pan, heat 2 tablespoons of oil over medium heat.
  5. Add the chopped onion and garlic and cook for 5–7 minutes until softened and slightly golden.
  6. Stir in the curry powder, turmeric, ground coriander, cumin, and cinnamon, and let the spices toast gently in the oil for about a minute until aromatic.
  7. Next, add the beef mince and cook until browned and crumbly, breaking it up with a spoon as you go.
  8. Once browned, squeeze the excess milk from the bread (keeping the milk for later) and tear the soaked bread into small pieces, adding it to the mince.
  9. Now stir in the vinegar, tomato paste, Worcestershire sauce, Mrs. Ball’s Original Chutney, raisins (if using), and the grated apple.
  10. Let the mixture simmer gently for about 10 minutes, stirring occasionally, until thickened and fragrant.
  11. Taste and season well with salt and black pepper.
  12. Once your meat mixture is done, spoon it into a greased ovenproof dish and smooth the top.
  13. In a bowl, whisk together the 2 eggs and the reserved milk from soaking the bread.
  14. Pour this custard gently over the mince, then place a few bay leaves on top for that signature look and a subtle herbal note.
  15. Bake in the preheated oven for 30–35 minutes, or until the custard topping is set and golden brown.
  16. To Serve: Serve your bobotie warm with yellow rice (with a touch of turmeric), sliced banana, a dollop of extra Mrs. Ball’s chutney on the side, and maybe a simple sambal of grated carrot and pineapple to bring everything together.
