Sardine & Lemon Linguine

The perfect balance of flavours for a comforting dish!

Ingredients:

  • 200g linguine (or spaghetti)
  • 1 can sardines in olive oil (about 100g), drained but reserve a bit of oil
  • 2 cloves garlic, thinly sliced
  • Zest of 1 lemon
  • Juice of ½ lemon
  • 2 Tbsp olive oil (use some from sardine can for extra flavor)
  • 2 Tbsp fresh parsley, chopped
  • Salt and pepper, to taste
  • Red chili flakes (optional, to taste)

How To Make Salmon & Linguine Pasta

  1. Cook the linguine in salted boiling water according to package instructions until al dente.
  2. Drain, reserving about ½ cup of pasta water.
  3. While the pasta cooks, heat olive oil in a large pan over medium heat.
  4. Add the sliced garlic and sauté gently until fragrant and golden (about 1-2 minutes). Be careful not to burn the garlic.
  5. Add the drained sardines to the pan and break them up gently with a spoon or spatula.
  6. Cook for 2-3 minutes to warm through.
  7. Stir in the lemon zest, lemon juice, and chili flakes (if using). Mix well.
  8. Add the cooked linguine to the pan and toss everything together. If the pasta seems dry, add a little reserved pasta water to loosen the sauce.
  9. Season with salt and pepper to taste.
  10. Remove from heat, stir in the chopped parsley and serve immediately.
