Sardine & Lemon Linguine
The perfect balance of flavours for a comforting dish!

Ingredients:
- 200g linguine (or spaghetti)
- 1 can sardines in olive oil (about 100g), drained but reserve a bit of oil
- 2 cloves garlic, thinly sliced
- Zest of 1 lemon
- Juice of ½ lemon
- 2 Tbsp olive oil (use some from sardine can for extra flavor)
- 2 Tbsp fresh parsley, chopped
- Salt and pepper, to taste
- Red chili flakes (optional, to taste)
How To Make Salmon & Linguine Pasta
- Cook the linguine in salted boiling water according to package instructions until al dente.
- Drain, reserving about ½ cup of pasta water.
- While the pasta cooks, heat olive oil in a large pan over medium heat.
- Add the sliced garlic and sauté gently until fragrant and golden (about 1-2 minutes). Be careful not to burn the garlic.
- Add the drained sardines to the pan and break them up gently with a spoon or spatula.
- Cook for 2-3 minutes to warm through.
- Stir in the lemon zest, lemon juice, and chili flakes (if using). Mix well.
- Add the cooked linguine to the pan and toss everything together. If the pasta seems dry, add a little reserved pasta water to loosen the sauce.
- Season with salt and pepper to taste.
- Remove from heat, stir in the chopped parsley and serve immediately.
