Tuscan Tuna Tomato Pasta
It’s a hearty, comforting dish that’s perfect for busy nights when you want something satisfying in under 30 minutes.
Ingredients:
- 250g pasta (spaghetti, penne, or fusilli)
- 1 can tuna (in oil or water, drained)
- 1 can chopped tomatoes (400g)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- ½ tsp dried chili flakes (optional)
- 1 tsp dried oregano or Italian herbs
- Salt and pepper, to taste
- Fresh parsley or basil (optional, for garnish)
How To Make Tuscan Tuna Tomato Pasta
- Cook the pasta according to package directions.
- Reserve ½ cup of pasta water.
- In a pan, heat olive oil and sauté onion until soft.
- Add garlic and cook for 1 minute.
- Pour in the chopped tomatoes, herbs, and chili flakes.
- Simmer for 8–10 minutes until the sauce thickens.
- Stir in the tuna, breaking it up gently.
- Season with salt and pepper.
- Toss the cooked pasta in the sauce, adding a little pasta water if needed for consistency.
- Serve topped with fresh parsley or basil and a drizzle of olive oil.
