Shredded Buffalo Chicken Burgers

Nothing like leftover chicken transfromed into delicious burgers!

Ingredients:

  • For the Buffalo Chicken:
  • 2 cups cooked, shredded chicken
  • ½ cup Buffalo hot sauce
  • 2 Tbsp butter, melted
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp honey
  • For the Burgers:
  • 4 burger buns
  • ½ cup ranch or blue cheese dressing
  • 1 cup shredded lettuce or slaw mix
  • ½ cup sliced pickles
  • Butter or oil for toasting buns

How To Make Shredded Buffalo Chicken Burgers

  1. In a medium saucepan over medium heat, combine Buffalo sauce, melted butter, garlic powder, honey and onion powder.
  2. Stir in the shredded chicken and mix well to coat.
  3. Heat through for 3–5 minutes until warm and saucy.
  4. Taste and adjust heat with more hot sauce.
  5. Lightly butter the insides of the buns and toast in a skillet or grill pan until golden and crisp.
  6. Spread a generous layer of ranch or blue cheese dressing on the bottom bun.
  7. Pile on a scoop of shredded Buffalo chicken.
  8. Top with shredded lettuce, pickles.
  9. Finish with the top bun.
  10. Serve warm with fries, sweet potato wedges, or celery sticks.
