Simply Chicken Mini Breakfast Sliders
Easter holidays are just a hop around the corner and it’s always a wonderful time to celebrate family traditions, from painting eggs, planning Easter egg hunts to making and baking delicious food

Ingredients:
8 slider buns, toasted
4-6 Simply Chicken Cheese Grillers
8 eggs, beaten
½ Cup sliced mushrooms
1/3 Cup baby tomatoes, halved
2 Tbsp butter
handful chives, finely chopped
salt and pepper, to taste
Method:
Cook the Simply Chicken Cheese Grillers according to package instructions and set aside for serving.
Bring a non-stick sauce pan to a medium-high heat, add 1 Tbsp of butter and the mushrooms and sauté for 3-4 minutes, then add the halved baby tomatoes. Allow the ingredients to cook for another 3-4 minutes to allow the tomatoes to soften and then set aside.
Bring a non-stick sauce pan to a medium-high heat, add the remaining tablespoon of butter and beaten eggs. Allow the eggs to cook for 1-2 minutes before scrambling the eggs, using a spatula. Cook the eggs for another 3-4 minutes until all the egg mixture has cooked through and set. You do not want to overcook and dry out your eggs. Add the chopped chives and season with salt and pepper.
To assemble the sliders, add some mushrooms and tomatoes to the base of the buns, top with some scrambled eggs and top with remaining bun. Serve the Simply chicken cheese grillers along with the sliders.
