How To Make Smashed Baked Potato Cups

  1. Preheat your oven to 200°C.
  2. Place potatoes in a pot of salted water.
  3. Bring to a boil and cook for 10–12 minutes, or until just tender but not falling apart.
  4. Drain and let cool slightly.
  5. Lightly spray a muffin tin with cooking spray.
  6. Place one potato in each cup and gently press down with a spoon or the bottom of a glass to smash them into the tin.
  7. Spray the smashed potatoes with more oil and season with salt and pepper.
  8. Bake for 15 minutes, or until crispy and golden brown.
  9. In a small bowl, mix the sour cream and cream cheese.
  10. Once the potatoes are crispy, remove the tray from the oven and spoon a dollop of the creamy mixture into each cup.
  11. Sprinkle with bacon bits and grated cheddar cheese.
  12. Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  13. Remove from the oven, let cool slightly, then garnish with chopped chives or spring onions.
  14. Serve warm and enjoy!
