Smashed Baked Potato Cups

Ingredients:
- 8 – 10 small to small – medium potatoes (or baby potatoes)
- Cooking spray or olive oil
- Salt and pepper, to taste
- ½ cup sour cream
- ½ cup spring onion & chives flavoured cream cheese
- 1 cup cooked bacon bits
- 1 ½ cups cheddar cheese, grated
To serve:
- Chives, chopped
- Spring onion, chopped
How To Make Smashed Baked Potato Cups
- Preheat your oven to 200°C.
- Place potatoes in a pot of salted water.
- Bring to a boil and cook for 10–12 minutes, or until just tender but not falling apart.
- Drain and let cool slightly.
- Lightly spray a muffin tin with cooking spray.
- Place one potato in each cup and gently press down with a spoon or the bottom of a glass to smash them into the tin.
- Spray the smashed potatoes with more oil and season with salt and pepper.
- Bake for 15 minutes, or until crispy and golden brown.
- In a small bowl, mix the sour cream and cream cheese.
- Once the potatoes are crispy, remove the tray from the oven and spoon a dollop of the creamy mixture into each cup.
- Sprinkle with bacon bits and grated cheddar cheese.
- Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, let cool slightly, then garnish with chopped chives or spring onions.
- Serve warm and enjoy!
