Smashed Potato Pizza Muffins

Ingredients:

  • 12 baby potatoes, washed and dried
  • Olive oil
  • 1 cup pizza tomato sauce
  • 1 cup grated mozzarella cheese
  • 100g pepperoni, chopped
  • Salt and pepper
  • Handful fresh basil, washed

How To Make Smashed Potato Pizza Muffins

  1. Place the potatoes in a medium pot and boil until soft. Drain and allow to cool.
  2. Preheat the oven to 180C and grease a muffin tin.
  3. Place one potato in each muffin mould, drizzle olive oil and season with salt and pepper
  4. Crush the potatoes with the bottom of a glass to create a cup shape.
  5. To each potato, add a tablespoon of tomato sauce, a bit of cheese, pepperoni and top with extra cheese.
  6. Bake in the oven for 25-30 minutes.
  7. Garnish with fresh basil and enjoy.
