Smashed Potato Pizza Muffins Discovering new ways with the versatile potato!Serves: Makes 12 Time: 1 hour Recipe by: Thando Manyoni Ingredients:12 baby potatoes, washed and dried Olive oil 1 cup pizza tomato sauce 1 cup grated mozzarella cheese 100g pepperoni, chopped Salt and pepper Handful fresh basil, washed How To Make Smashed Potato Pizza MuffinsPlace the potatoes in a medium pot and boil until soft. Drain and allow to cool. Preheat the oven to 180C and grease a muffin tin. Place one potato in each muffin mould, drizzle olive oil and season with salt and pepperCrush the potatoes with the bottom of a glass to create a cup shape. To each potato, add a tablespoon of tomato sauce, a bit of cheese, pepperoni and top with extra cheese. Bake in the oven for 25-30 minutes. Garnish with fresh basil and enjoy.
