Smokey Malva Pudding with a Rooibos Sauce

Here’s a hack with the Weber Original Kettle Braai for a smokey malva pudding over the coals!

Ingredients:

  • 1 medium foil roasting tray
  • 1 malva pudding kit
  • 100ml milk
  • 1 egg
  • 2 Tbsp apricot jam, melted
  • Sauce:
  • 2 rooibos tea bags
  • 125ml cream
  • 2 Tbsp butter

How To Make

  1. Prepare your Weber and allow to heat up before baking.
  2. Spray your foil roasting tray well with a nonstick baking spray.
  3. Add the Malva pudding contents into a mixing bowl. In a measuring jug, add the egg, milk and apricot jam and whisk to combine.
  4. Add the milk mixture to the dry mixture and combine until smooth.
  5. Pour the wet mixture into the foil container, when the coals are a medium to high heat place the pudding in the center of the Weber.
  6. Close the lid and allow to bake for 15-20 minutes.
  7. You want to turn the pudding halfway through to enough even baking.
  8. In the meantime, prepare the sauce by adding the cream, rooibos tea bags, butter and the contents of the sauce to a sauce pot and bring to the boil, then set aside.
  9. Once the malva pudding has baked through, pour the hot rooibos sauce over it and allow it to soak.
  10. Serve the Smokey malva with some vanilla ice cream or custard.
