Snowman Cupcakes

It’s the most wonderful time of the year with Golden Cloud and Beacon!

  • For the cupcakes:
  • 500g Golden Cloud Vanilla Cake Mix
  • 150ml Sunflower Oil
  • 250ml Water
  • 2 eggs
  • For the buttercream:
  • 1 cup butter, room temp
  • 2 ½ icing sugar
  • 2 tsp vanilla essence
  • Pinch of salt
  • 2 tbsp milk
  • 150g Beacon mmmMallows Pink& White
  • Pretzel sticks
  • 1 cup black royal icing
  • 1 cup orange royal icing
  • 1 cup red royal icing
  • Silver edible glitter

How To Make

  1. Preheat the oven to 180C and line a cupcake baking tin with cupcake liners.
  2. Place the Golden Cloud Vanilla cake mix into a large bowl.
  3. In a jug, whisk together the oil, water and eggs.
  4. Make a well in the centre of the cake mix and add the wet ingredients. Whisk until the mixture is smooth and lump free.
  5. Pour half the mixture into the cupcake liners until ¾ full.
  6. Place in the oven and bake for 15-20 minutes. Remove from the oven and allow to cool completely
  7. Make the buttercream by whisking the butter until fluffy. Gradually add the icing sugar until fully incorporated.
  8. Add the vanilla, salt a milk and whisk to combine.
  9. Transfer the buttercream into a piping bag fitted with a star nozzle.
  10. To assemble; pipe buttercream on the cupcake, place one marshmallow directly in the centre of the cupcake.
  11. Use the white royal icing to stick another marshmallow onto the first marshmallow.
  12. Use the black royal icing to draw eyes and a smile on the top marshmallow.
  13. Use the orange royal icing to draw the nose
  14. Use the red royal icing, to draw the buttons.
  15. Break the pretzel sticks to use as arms and stick on with royal icing.
  16. Sprinkle with silver glitter to finish
