Spiced Chicken Tacos with Crisp Apple Slaw

Ingredients:

For the spiced chicken:

  • 2 chicken breasts, sliced
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp smoked chili flakes
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 1 tbsp lime juice

For the apple slaw:

  • 1 green apple, julienned
  • 1 cup shredded cabbage
  • 1/4 cup grated carrot
  • 1 tbsp lemon juice
  • 2 tbsp mayonnaise or Greek yogurt
  • Salt and pepper, to taste

For assembly:

  • 6 small soft taco tortillas
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

How To Make Spiced Chicken Tacos with Crisp Apple Slaw

  1. n a large bowl, combine the sliced chicken breast with onion powder, garlic powder, smoked paprika, cumin, chili flakes, salt, pepper, olive oil, and lime juice. Mix well to coat the chicken with the spices. Heat a large pan over medium-high heat. Add the marinated chicken and cook for about 5-7 minutes, or until cooked through and nicely browned. Set aside.
  2. In a mixing bowl, combine julienned apple, shredded cabbage, and grated carrot. In a small bowl, whisk together lemon juice and mayonnaise or Greek yogurt, then add to the slaw. Season with salt and pepper, and toss to coat. Warm the tortillas in a pan or microwave, then layer each with spiced chicken and a generous scoop of apple slaw. Top with fresh cilantro and serve with lime wedges on the side.
