Sweet Potato Breakfast Hash

Serves: 2–4

Ingredients:

  • 2–3 medium sweet potatoes, diced
  • 2 Tbsp olive oil
  • 1 medium onion, diced
  • 1 bell pepper (red or green), diced
  • ½ tsp ground cumin
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • Salt & ; freshly ground black pepper, to taste
  • 1 cup chopped kale or
  • 4 large eggs

To serve:

  • Avocado
  • Spring onion
  • Coriander
  • Chili flakes

How To Make Sweet Potato Breakfast Hash

  1. In a large bowl, toss diced sweet potatoes with 1 tbsp oil, salt, and spices.
  2. Heat oil in a large skillet over medium-high.
  3. Add onion and bell pepper, until soft.
  4. Stir in cumin, paprika, garlic powder, salt & pepper.
  5. Spread spiced sweet potato evenly in the pan.
  6. Cook for 10–12 minutes, stirring occasionally.
  7. Stir in kale or spinach and cook until just wilted.
  8. Create four small indentations in the hash.
  9. Crack an egg into each well.
  10. Reduce heat to medium-low, cover skillet, and cook for 7–10 minute until egg whites are set and yolks reach your desired doneness.
