Sweet Potato Breakfast Hash
Start your day right with a one-pan wonder!
Serves: 2–4
Preparation Time: 10–15 min
Cooking Time: 20–25 min
Ingredients:
- 2–3 medium sweet potatoes, diced
- 2 Tbsp olive oil
- 1 medium onion, diced
- 1 bell pepper (red or green), diced
- ½ tsp ground cumin
- ½ tsp smoked paprika
- ½ tsp garlic powder
- Salt & ; freshly ground black pepper, to taste
- 1 cup chopped kale or
- 4 large eggs
To serve:
- Avocado
- Spring onion
- Coriander
- Chili flakes
How To Make Sweet Potato Breakfast Hash
- In a large bowl, toss diced sweet potatoes with 1 tbsp oil, salt, and spices.
- Heat oil in a large skillet over medium-high.
- Add onion and bell pepper, until soft.
- Stir in cumin, paprika, garlic powder, salt & pepper.
- Spread spiced sweet potato evenly in the pan.
- Cook for 10–12 minutes, stirring occasionally.
- Stir in kale or spinach and cook until just wilted.
- Create four small indentations in the hash.
- Crack an egg into each well.
- Reduce heat to medium-low, cover skillet, and cook for 7–10 minute until egg whites are set and yolks reach your desired doneness.
