Tastic Coconut Rice

Thai food is known for balancing spices with fragrance, it offers complexity without fussiness, and manages to always leave you wanting more! The Lazy Makoti is back in the kitchen with us, to show us how to make comforting bowl of coconut rice and spicy beef using Tastic Jasmine rice.

Ingredients:

For the rice:
1 Tbsp coconut oil
2 Cups Jasmine rice
1 tsp salt
2 Cups water
1 Cup coconut milk

For the spicy beef:
400-500g steak sliced in thin strips against the grain
1 tsp water
1 tsp cornstarch
1 tsp low sodium soy sauce
1 Tbsp oil
1 whole red bell pepper thinly sliced
1 whole green onion sliced (green and white parts)
3 cloves garlic minced
2 Tbsp soy sauce
1 Tbsp fish sauce
1 Tbsp oyster sauce
1/4 Cup water
2 Tbsp light brown sugar

Method:

For the rice:
In a saucepan, heat on medium heat and add the rice.
Lightly toast for a few minutes till lightly brown, keeping a close eye on it
Add the water, coconut milk and salt and stir well
Cover the pot and bring to a boil, reduce the heat and cook the rice
Turn off the heat and rest 5 mins. Fluff with a fork and serve

For the spicy beef:
In a medium bowl add beef, water, cornstarch and soy sauce. Toss to coat. Marinade for 30 minutes.
Heat oil in a large skillet over high heat. Remove the beef from the marinade and sear the beef until just browned, 2-3 minutes. Remove from the pan and set aside
Add the red pepper and green onion to the pan and cook for 2-3 minutes or until tender. Add in garlic and cook for an additional minute.
Add the beef back to the pan along with the sauce. Cook until thickened, 2-3 minutes.
Fold in the basil and cook until it’s just wilted. Serve immediately with coconut rice with green onions and sesame seeds if desired.

Chefs Tip:

Slicing the steak against the grain ensures that the steak slices will remain succulent and tender
