Tastic Sweet & Sour Salmon Rice Bowl

Today we are in Japan with this Sweet and Sour Salmon Rice Bowl. This dish has everything going on. The freshness and crispness of the veggies. Beautiful richness of the avocado pairing so well with that starchy nutty rice. The perfectly marinated salmon is incredible. It is sweet, sour, with a nice subtle garlic flavor. The Lazy Makoti is back to awaken our senses fresh flavour that Asian cuisine has to offer!

Serves: 2-4
Time: 40 minutes

Ingredients:

For the marinade:
2 tablespoons rice vinegar
2 tablespoons sriracha
2 tablespoons honey
1 tablespoon garlic, minced
1 tablespoon ginger, minced

3 salmon filets
2 tablespoons vegetable oil
2 cups Tastic sushi rice
Edamame, for topping
Cucumber, sliced
Sesame seeds, toasted
1 avocado, sliced

Method:

Combine marinade ingredients, mix well, and pour over salmon in a large resealable bag. Marinate in the fridge for at least 2 hours

Heat oil in a pot over medium heat. Sear salmon skin-side up for 2-3 minutes, then flip and cook for another 2 minutes. Pour the marinade over the fish, reduce heat and simmer for 30 minutes.

Remove the salmon and set aside, then continue to cook sauce till thickened

In the meantime, cook the sushi rice
Serve the salmon over sushi rice, spoon glaze on top, and garnish with cucumber, edamame, avocado, and sesame seeds
