Serves: 3-4

Ingredients:
2/3 cup soy sauce
1 tbsp mirin or rice wine vinegar
½ cup Krush orange juice
¼ cup light brown sugar
1 tbsp grated ginger
1 clove garlic, chopped
¼ cup corn flour
x6 chicken thighs, debones and skinless
Skewer sticks soaked in water
Sesame seeds for garnish
Fresh coriander for garnish
Method:
In a saucepot, whisk together the soy sauce, Krush juice, mirin, sugar, ginger and garlic. Add a dash of Krush to the corn flour and stir, then add to the saucepot along with the rest of the sauce ingredients. Bring the mixture to a boil, constantly whisking until the sauce is slightly thickened. Allow to cool.
Thread the chicken onto the skewers and season with salt and pepper. Baste the skewers with the sauce and cook on a hot grill. Alternatively, place onto a baking sheet and baste with the sauce. Grill in the oven for 20-25 minutes, until the chicken is cooked through.
Garnish with sesame and fresh coriander. Serve with a fresh salad of choice
Chefs Tip:
- You can use a different type of meat for this recipe – pork and beef work well.
- Remember to mix the corn flour with non-hot liquid so that it can disperse and cook evenly without lumps
