The "Dinner is Served" Meatloaf
This recipe is camp, it’s over-the-top, and it’s “bless my soul” delicious.
Servings: 6 people
Prep time: 15 minutes
Cook time: 1 hour
Total time: 1 hour 15 minutes
Ingredients:
- 800g Ground Beef (Extra Lean)
- 1 cup Breadcrumbs
- 1/4 cup Milk (to soak the crumbs)
- 1 Medium Onion, finely diced
- 2 Cloves Garlic, minced
- 1 Large Egg, beaten
- 2 tbsp Worcestershire Sauce
- 1 tsp Dried Thyme
- Fine Salt and Black Pepper to taste
The “Red Lips” Glaze
- 1/2 cup Tomato Ketchup
- 1 tbsp Brown Sugar
- 1 tsp Smoked Paprika
- 1 tsp Dijon Mustard
How To Make Meatloaf
- Preheat your oven to 180°C. Line a baking tray or loaf tin with non-stick baking paper.
- In a small bowl, soak the breadcrumbs in the milk for 5 minutes. In a large mixing bowl, combine the ground beef, soaked breadcrumbs, onion, garlic, egg, Worcestershire sauce, and herbs.
- Mix the ingredients by hand until just combined (avoid over-mixing to keep the texture tender). Shape the mixture into a uniform loaf on your prepared tray.
- Whisk the glaze ingredients together until smooth. Brush exactly half of the crimson glaze over the top and sides of the loaf.
- Place in the center of the oven and bake for 45 minutes.
- Remove the tray from the oven. Brush the remaining glaze over the loaf to create a thick, glossy finish. Return to the oven for a final 15 minutes.
- Allow the meatloaf to rest for at least 10 minutes before slicing. This ensures the “mystery” stays intact and the slices stay firm.
