Thermomix Pomegranate Mojito
A refreshing pomegranate mojito will give you mo problems.

Ingredients:
900 g ice cubes
30 – 40 fresh mint leaves (approx. 20 g)plus 4 sprigs for garnishing
2 limes, quartered
150 g white rum
125 g pomegranate juice
125 g soda water, plus extra for serving if desired
80 g sugar syrup (see tip)
30 g pomegranate seeds
Method:
Place 600 g ice cubes in mixing bowl and, with aid of spatula, crush
25 sec/speed 4. Divide between 4 glasses. Place mint leaves and limes
in mixing bowl then bruise 20 sec/speed 4. Scrape down sides of
mixing bowl with spatula. Add remaining 300 g ice cubes, white rum,
pomegranate juice, soda water and sugar syrup then mix 5
sec/speed 4. Insert simmering basket, hold in place with spatula and
strain cocktail over the crushed ice in glasses. Divide pomegranate
seeds between glasses and garnish with sprigs of mint. Stir with a
straw before serving, adding more soda water to taste, if desired.
