Karen’s KOO Red Kidney Bean Croquettes

KOO Colour Your Plate Season 2’s winner, Karen van der Merwe, shares one of her winning recipes!

Serves: 5-6
Time: 15 minutes

Ingredients:

1 KOO Red Kidney Beans, drained & rinsed
1 Tablespoon finely chopped onion
1/4 tsp cumin
1/4tsp oregano
1/4tsp smoked paprika
Salt & pepper
1/4 cup oats
1/2 cup panko crumbs

Oil for frying
Sweet chilli sauce
Micro herbs
Coconut cream
Salad cream
Mild chakalaka
Squeeze of lime

Method:

Add everything to blender. Form croquettes and fry!

Chefs Tip:Serve with salad cream, sweet chilli sauce, mild chakalaka & a squeeze of lime
