Tomato, Feta and Mint Fritters

Five ingredients, forty minutes and a couple of pantry staples is all you need!

Ingredients:

500g large tomatoes, finely chopped
1 small red onion, finely chop
½ cup each of parsley and mint, finely chopped
250g feta
1 cup self-rising flour
Salt and pepper to taste

Additional:
Oil for frying
Red wine vinegar

Method:

Place the chopped tomatoes into a large sieve set over a bowl and squeeze out as much liquid as possible from the flesh. Reserve the juice.
Reserve some of the chopped onion for the dressing and place the rest of the chopped into a bowl along with the herbs, feta and flour. Season with salt and pepper and mix to combine. Shape into patties.
Heat oil and fry off the patties until golden brown on both sides.

Whisk the reserved tomato juice with a tablespoon of red wine vinegar and olive oil. Stir in the chopped onion and season to taste
Serve with fritters.

Chefs Tip: These are perfect for entertaining guests, you can prep, shape and place the fritters in the fridge and simply fry when you’re ready to serve.
