Turmeric Cauliflower Steaks with Couscous Salad

Inspired by the colours we get in nature with Plascon, we put together this vibrant and flavourful plate!

Serves: 2
Time: 1 hour

Ingredients:

  • 1 whole cauliflower, cut into 1cm slices
  • 1/3 cup Olive oil
  • 1 Tbsp Ground turmeric
  • 1 tsp ground cumin
    Couscous salad:
  • 1 cup cooked couscous
  • 1/3 cup peanuts and raisins mix
  • 1/3 cup pomegranate arils or dried cranberries
  • Handful fresh coriander, finely chopped
  • Handful fresh mint, finely chopped
  • Salt and pepper, to taste
    Harissa dressing:
  • 2 Tbsp Harissa paste
  • 4 Tbsp yoghurt
  • Juice and zest of one orange
  • Dash of water

How To Make:

  1. Add the turmeric, cumin, olive oil and salt to a mixing bowl and combine.
  2. Brush the cauliflower steaks with the marinade and allow to marinade for at least 40 minutes.
  3. To prepare the salad by tossing all the ingredients together and season well with salt and pepper.
  4. Bring a griddle pan to a medium-high heat, grill the steaks on each side for 3 minutes a side. Season with salt and pepper.
  5. To prepare the dressing, combine the ingredients and thin out with water to the consistency you prefer.
  6. Serve the cauliflower on a bed of salad with a drizzle of dressing.
