
Turmeric Cauliflower Steaks with Couscous Salad
Inspired by the colours we get in nature with Plascon, we put together this vibrant and flavourful plate!

Serves: 2
Time: 1 hour
Ingredients:
- 1 whole cauliflower, cut into 1cm slices
- 1/3 cup Olive oil
- 1 Tbsp Ground turmeric
- 1 tsp ground cumin
Couscous salad: - 1 cup cooked couscous
- 1/3 cup peanuts and raisins mix
- 1/3 cup pomegranate arils or dried cranberries
- Handful fresh coriander, finely chopped
- Handful fresh mint, finely chopped
- Salt and pepper, to taste
Harissa dressing: - 2 Tbsp Harissa paste
- 4 Tbsp yoghurt
- Juice and zest of one orange
- Dash of water
How To Make:
- Add the turmeric, cumin, olive oil and salt to a mixing bowl and combine.
- Brush the cauliflower steaks with the marinade and allow to marinade for at least 40 minutes.
- To prepare the salad by tossing all the ingredients together and season well with salt and pepper.
- Bring a griddle pan to a medium-high heat, grill the steaks on each side for 3 minutes a side. Season with salt and pepper.
- To prepare the dressing, combine the ingredients and thin out with water to the consistency you prefer.
- Serve the cauliflower on a bed of salad with a drizzle of dressing.
