
Tuscan Style Creamy Butter Beans
A comforting and easy vegetarian dish for the week.

Ingredients:
- 2 tins butter beans, drained & rinsed
- 1 Tbsp olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp dried oregano
- ½ tsp smoked paprika
- ½ tsp chili flakes (optional, for heat)
- Salt & black pepper, to taste
- ½ cup vegetable stock
- ½ cup cream
- 2 Tbsp fresh parsley, chopped
- ¼ cup parmesan cheese, grated
How To Make Tuscan Style Creamy Butter Beans
- Heat olive oil in a large pan over medium heat.
- Add chopped onion and sauté for 3–4 minutes, until soft.
- Stir in garlic, oregano, smoked paprika, and chili flakes.
- Cook for 1 minute, until fragrant.
- Pour in the vegetable stock and bring to a gentle simmer.
- Stir in the cream and season with salt and black pepper.
- Let the sauce cook for 5 minutes, allowing the flavours to blend.
- Stir in the butter beans and simmer for another 5 minutes, allowing them to absorb the flavours.
- Sprinkle with fresh parsley or basil and top with grated Parmesan.
- Serve hot with crusty bread, over rice, or as a side dish.
