Tuscan Style Creamy Butter Beans

A comforting and easy vegetarian dish for the week.

Ingredients:

  • 2 tins butter beans, drained & rinsed
  • 1 Tbsp olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • ½ tsp smoked paprika
  • ½ tsp chili flakes (optional, for heat)
  • Salt & black pepper, to taste
  • ½ cup vegetable stock
  • ½ cup cream
  • 2 Tbsp fresh parsley, chopped
  • ¼ cup parmesan cheese, grated

How To Make Tuscan Style Creamy Butter Beans

  1. Heat olive oil in a large pan over medium heat.
  2. Add chopped onion and sauté for 3–4 minutes, until soft.
  3. Stir in garlic, oregano, smoked paprika, and chili flakes.
  4. Cook for 1 minute, until fragrant.
  5. Pour in the vegetable stock and bring to a gentle simmer.
  6. Stir in the cream and season with salt and black pepper.
  7. Let the sauce cook for 5 minutes, allowing the flavours to blend.
  8. Stir in the butter beans and simmer for another 5 minutes, allowing them to absorb the flavours.
  9. Sprinkle with fresh parsley or basil and top with grated Parmesan.
  10. Serve hot with crusty bread, over rice, or as a side dish.
