
Vetkoek and Mince
When winter rolls in, there’s nothing better than gathering around a warm, home-cooked vetkoek and mince

Ingredients:
- 2 Tbsp oil for frying
- 1 large onion, diced (150g)
- 1 tsp garlic, minced
- 1/2 tsp turmeric
- 1 Tbsp mild curry powder
- 1/4 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp allspice
- 4 Tbsp boiling water (60ml)
- 1 beef stock cube
- 1/2 cup full-fat coconut milk (125ml)
- 500g beef mince
- 2 Tbsp Mrs Balls Original Chutney
- 2 Tbsp tomato paste
- 1 cup frozen mixed vegetables (250ml)
- 1 tsp salt (or to taste)
- Black pepper, to taste
- 1 tsp sugar (optional)
How To Make Curried Mince
- Chop the onion into small chunks and dissolve the beef stock cube in the boiled water, setting it aside.
- Heat the oil in a medium saucepan over medium heat, then add the diced onions and fry for 5-6 minutes until soft and translucent.
- Stir in the garlic, turmeric, curry powder, cinnamon, ginger, and allspice, frying for 2 minutes while stirring continuously to release the flavours.
- Pour in the beef stock and coconut milk, stir well, and let it simmer for 3-4 minutes.
- Add the beef mince, breaking it up with a fork, and cook for about 6 minutes until browned.
- Stir in the Mrs Balls Original Chutney, tomato paste, frozen vegetables, salt, pepper, and sugar (if using).
- Cook uncovered for 7-10 minutes, stirring frequently, until the vegetables are tender and the liquid has reduced.
- Serve hot in a vetkoek or with rice. Enjoy!
