Vetkoek and Mince

When winter rolls in, there’s nothing better than gathering around a warm, home-cooked vetkoek and mince

Serves: 4
Preparation time: 10 minutes
Cooking time: 20 minutes

Ingredients:

  • 2 Tbsp oil for frying
  • 1 large onion, diced (150g)
  • 1 tsp garlic, minced
  • 1/2 tsp turmeric
  • 1 Tbsp mild curry powder
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp allspice
  • 4 Tbsp boiling water (60ml)
  • 1 beef stock cube
  • 1/2 cup full-fat coconut milk (125ml)
  • 500g beef mince
  • 2 Tbsp Mrs Balls Original Chutney
  • 2 Tbsp tomato paste
  • 1 cup frozen mixed vegetables (250ml)
  • 1 tsp salt (or to taste)
  • Black pepper, to taste
  • 1 tsp sugar (optional)

How To Make Curried Mince

  1. Chop the onion into small chunks and dissolve the beef stock cube in the boiled water, setting it aside.
  2. Heat the oil in a medium saucepan over medium heat, then add the diced onions and fry for 5-6 minutes until soft and translucent.
  3. Stir in the garlic, turmeric, curry powder, cinnamon, ginger, and allspice, frying for 2 minutes while stirring continuously to release the flavours.
  4. Pour in the beef stock and coconut milk, stir well, and let it simmer for 3-4 minutes.
  5. Add the beef mince, breaking it up with a fork, and cook for about 6 minutes until browned.
  6. Stir in the Mrs Balls Original Chutney, tomato paste, frozen vegetables, salt, pepper, and sugar (if using).
  7. Cook uncovered for 7-10 minutes, stirring frequently, until the vegetables are tender and the liquid has reduced.
  8. Serve hot in a vetkoek or with rice. Enjoy!
