Whipped Goats Cheese with Pickled Grapes
A fruit that can unlock plenty different personalities!
Ingredients:
- 100 ml red grape juice
- 100 ml red wine vinegar
- 100 g sugar
- 2 sprigs thyme
- 1 bay leaf
- Pinch of salt
- 10 peppercorns
- 1 bunch red grapes, halved
- A handful of strawberries, halved
How To Make Pickled Grapes
- In a small saucepan, combine the red grape juice, red wine vinegar, sugar, thyme, bay leaf, salt, and peppercorns.
- Heat gently, bringing the mixture to just under boil.
- Stir until the sugar has fully dissolved.
- Place the halved grapes and strawberries into a clean jar or container.
- Pour the warm pickling liquid over the fruit, ensuring it is fully covered.
- Allow to cool then seal and refrigerate.
- Leave to marinate in the fridge for at least 24 hours before serving.

- 150 g goat’s cheese
- 100 ml whipping cream
- 1–2 tsp honey (to taste)
- Freshly ground black pepper, to taste
- Pinch of salt
- Pickled grapes
- Chopped parsley, for garnish
How To Make Whipped Goats Cheese
- Add the goat’s cheese, whipping cream, and honey to a food processor.
- Blend until smooth, light, and creamy.
- Season with black pepper and a pinch of salt, then pulse briefly to combine.
- Spoon the mixture into a glass or bowl and top with the pickled grapes.
- Garnish with chopped parsley and serve.
