Mauritian Dipain Frire
Dipain frire isn’t just a snack, it’s love in every bite.

About 20 minutes – 10 slices
Ingredients:
- 10 slices white bread old or fresh
- 150 g plain flour
- 250 ml water
- 1 tbsp spring onion chopped
- 1 tsp salt
- Yellow food colouring
- 1 medium size tomato
- 4 sprigs coriander
- 1 chilli
- 1 tsp salt
- 1 tsp water
How To Make Mauritian Dipain Frire
- BATTER
- In a large bowl, add the flour, salt, spring onion and combine with a whisk.
- Pour in the water and whisk well until it becomes a smooth batter.
- Add a few drops of yellow food colouring, whisk and set aside.
- FRY BREAD
- In a large frying pot, heat up some vegetable oil(180C – 190C).
- Cut your bread and portion 10 to 12 equal slices and coat them in batter.
- Gently dip the slices of bread in the batter and deep fry for 4-6 minutes or until crispy (small batches to avoid sticking together and flip to cook evenly on both sides).
- Take them out and let the excess oil drain before serving.
- CORIANDER AND TOMATO CUTNEY
- Cut the tomato into small chucks.
- Add to blender with the coriander sprigs, salt, chilli and 1tsp of water.
- Blend until all the ingredients break down.
- SERVE by spreading some chutney on the bread slices like jam on toast.
