Airfryer Muffins and Scones

Beat loadshedding and satisfy your sweet tooth with Golden Cloud and these airfryer muffins and scones!

Serves: 8-12

Ingredients:

  • For the scones:
  • 500g Golden Cloud Scone Mix
  • ½ cup butter, cold
  • 2 large eggs
  • 180ml milk
  • To serve; Fresh cream, Strawberry jam
  • For the muffins:
  • 500g Golden Cloud Cappuccino Muffin Mix
  • 125ml sunflower oil
  • 2 large eggs
  • 200ml water

How To Make Airfryer Muffins and Scones

  1. Prepare an air fryer basket with parchment paper.
  2. For the scones:
  3. Place the Golden Cloud Scone
  4. Mix into a medium-sized bowl.
  5. Rub the butter into the scone mix using your fingertips until the mixture resembles bread crumbs
  6. Create a well in the centre of the mixture and add the milk mixture.
  7. Gradually combine the dry and wet ingredients.
  8. Using your fingertips, press the dough out gently onto a lightly floured surface to a 2-3cm height
  9. Cut out scones and arrange in the air fryer basket.
  10. Bake at 190C for 10-12 minutes.
  11. Serve with cream and jam.
  12. For the muffins:
  13. Line a 6-cup muffin pan with muffin liners
  14. Whisk the oil, water and eggs together
  15. Place the Golden Cloud Cappuccino Muffin Mix in a medium-sized mixing bowl.
  16. Make a well in the centre and pour the wet ingredients.
  17. Stir until just combined.
  18. Spoon the batter into the muffin pans and fill each cup ¾ full
  19. Bake for 10-12 minutes.
