Cinnamon Swirl Loaf Cake

Serves: 8-10
Ingredients:
- ½ cup butter, room temperature
- 1 cup white sugar
- 2 eggs
- 2 tsp vanilla essence
- 1 ½ cup cake flour
- Pinch of salt
- ½ tsp bicarbonate of soda
- ½ tsp Royal Baking Powder
- ½ cup buttermilk
- For the cinnamon swirl:
- 3 tbsp brown sugar
- 1 tbsp ground cinnamon
- 2 tbsp buttermilk
- For the topping:
- 2 tbsp brown sugar
- 1 tsp cinnamon
How To Make Cinnamon Swirl Loaf Cake
- Preheat the oven to 180C and prepare a loaf baking tin.
- In a large bowl with an electric mixer, cream together the butter and sugar until light and fluffy, about 3 minutes.
- Beat in the eggs, one at a time, beating after each addition.
- Add the vanilla essence, and beat.
- In a separate bowl, combine the flour, salt, baking soda and baking powder.
- Add the flour mixture and the buttermilk alternately until fully incorporated.
- Mixing after each addition.
- Scoop 1 cup of the batter into a small bowl, add the cinnamon swirl ingredients and stir.
- Spoon a thin layer of the plain batter in the bottom of the load tin.
- Using a spoon, drop alternating spoonfuls of the plain and the cinnamon batter into the pan.
- Top with the remaining plain batter and smooth the top.
- Using a long skewer, swirl through the batter a few times.
- Make the topping by combine the ingredients in a small bowl, sprinkle over the loaf and bake for 50-60 minutes or until a skewer inserted comes out clean.
- Allow to cool then slice and enjoy!
