Cinnamon Swirl Loaf Cake

  • ½ cup butter, room temperature
  • 1 cup white sugar
  • 2 eggs
  • 2 tsp vanilla essence
  • 1 ½ cup cake flour
  • Pinch of salt
  • ½ tsp bicarbonate of soda
  • ½ tsp Royal Baking Powder
  • ½ cup buttermilk
  • For the cinnamon swirl:
  • 3 tbsp brown sugar
  • 1 tbsp ground cinnamon
  • 2 tbsp buttermilk
  • For the topping:
  • 2 tbsp brown sugar
  • 1 tsp cinnamon

How To Make Cinnamon Swirl Loaf Cake

  1. Preheat the oven to 180C and prepare a loaf baking tin.
  2. In a large bowl with an electric mixer, cream together the butter and sugar until light and fluffy, about 3 minutes.
  3. Beat in the eggs, one at a time, beating after each addition.
  4. Add the vanilla essence, and beat.
  5. In a separate bowl, combine the flour, salt, baking soda and baking powder.
  6. Add the flour mixture and the buttermilk alternately until fully incorporated.
  7. Mixing after each addition.
  8. Scoop 1 cup of the batter into a small bowl, add the cinnamon swirl ingredients and stir.
  9. Spoon a thin layer of the plain batter in the bottom of the load tin.
  10. Using a spoon, drop alternating spoonfuls of the plain and the cinnamon batter into the pan.
  11. Top with the remaining plain batter and smooth the top.
  12. Using a long skewer, swirl through the batter a few times.
  13. Make the topping by combine the ingredients in a small bowl, sprinkle over the loaf and bake for 50-60 minutes or until a skewer inserted comes out clean.
  14. Allow to cool then slice and enjoy!
