Make the batter by mixing together the flours, ginger, garlic, sesame seeds and salt and pepper. mix until a thick lump free paste is formed. Add in the frozen fries, and mix until evenly coated, deep dry until golden and crisp. Make the sauce by combining all the ingredients in large pan on medium heat, transfer the fries to the pan and toss to coat. Serve and garnish with spring onion. Top with the chillinaise and enjoy.
Chefs Tip: Add the water as needed to the batter until you achieve a consistency that evenly coats the chips.
