Golden Cloud Turkish Delight Brownies served with Cinnamon and Rose Salep

Brownies are the perfect balance of fudgy and cakey, they are guaranteed to be a delight.

200g dark chocolate
200g butter
5 eggs
350g sugar
2 tsp vanilla essence
150g Golden Cloud Cake Flour
50g Cocoa powder
80g Beacon Turkish Delight

Cinnamon and rose salep:
10g salep powder
40g sugar
1L milk
2 tbsp dried rose petals
1 tsp ground cinnamon


Preheat the oven to 180C and prepare a square baking tin.
Melt the chocolate and butter over a pot of simmering hot water.
Cream the eggs, sugar and vanilla essence until light and fluffy. Fold 1/3 of the chocolate mixture to the chocolate mixture and stir well. Add the remaining egg mixture to the chocolate mixture until fully incorporated.
Chop the Turkish delight into chunky pieces.
Fold in the cake flour, cocoa powder and Turkish delight. Mix until fully incorporated. The batter will be very wet.
Pour the mixture into the baking tin and spread evenly.
Bake for 20-30 minutes, or until a crust form but the center is still completely moist.
Remove from the oven, allow to cool then cut into squares.
Whisk the salep, sugar, and a little milk in heavy base saucepan until completely lump free. Add the remaining milk, whisking to ensure that the mixture is completely lump free. Heat over a low to medium heat, add the cinnamon stick and rose petals. Allow to simmer gently for 15 minutes. remove from the heat and strain. Taste for sugar, adding more if needed.
Serve immediately with Turkish delight brownies.
