B-well Mayo Creamy Chili Chicken Corn Dip

Creamy chili chicken corn dip incorporates all the simplest ingredients into the most flavour packed creamy, cheesy corn filled dip and it  is perfect for weekend hosting and parties.

2 tbsp B-well Extra Virgin Olive Oil
½ cup B-well garlicnaise
1 onion, chopped
4 garlic cloves, finely chopped
3 jalapeno peppers, deseeded and chopped
1 tsp cumin
1 tsp Spanish smoked paprika
250g cream cheese
½ cup sour cream
400g Cannellini beans
2 cups shredded chicken
1 cup corn
1 cup mature white cheddar

To serve:
Tortilla chips
Fresh parsley
Spring onion, sliced


Preheat the oven to 180C.
Heat the olive oil in an oven safe skillet over medium heat. Add the onion, and cook until translucent. Stir in the garlic, jalapeno, cumin, paprika, salt and pepper. Cook for 5 minutes.
Remove from the heat, mix in the cream cheese, sour cream, beans, chicken, corn, B-well garlicnaise and half the cheese.
Top with the remaining cheese and bake 15-20 minutes, until the cheese is melted and bubbly.
Top with the extra mayo, fresh parsley and spring onion. Serve with tortilla chips.

Chefs Tip: If you don’t have an oven safe skillet, once the mixture is cooked you can transfer it into a baking casserole.
