Clover Bliss Red Velvet Yoghurt Berry Rolls

Soft buttery, freshly baked sweet rolls with a berry sauce is a delicious dessert to enjoy in the comfort of your home.

1 cup warm milk
2 ½ tsp dry yeast
¼ cup sugar
4 cups flour
2 large eggs
Pinch of salt
80g butter at room temp

For the filling
300g blueberries
1/4 cup sugar
1 ½ tbsp. corn flour
Squeeze of lemon juice

For the frosting
200g cream cheese, plain
1 cup Clover Bliss Double Cream yoghurt, Red Velvet flavour
½ cup icing sugar
2 tbsp blueberry filling


Place the warm milk into a mixing jug and sprinkle over the yeast and sugar. Allow to sit until foamy.
To a large mixing bowl , add the flour, salt and combine. Make a well in the centre and add in the eggs and mix, yeast mixture and mix. Add in the soft butter and keep mixing until a soft dough forms. You can also use a stand mixer with a dough hook attachment for this.
Flour a surface and knead the dough until a smooth dough forms. Place into a greased bowl and cover. Allow to rise until double in size.

Prepare the filling by adding the blueberries, cornstarch, sugar and lemon juice to a saucepan on a low heat. Allow to cook until thickened and mash the berries as they cook.
Remove from heat. Mix together the ingredients for the frosting and swirl in the blueberry filling.

Punch down the dough and place onto a floured surface. Roll out into a rectangle shape, dollop with the blueberry filling and spread out. Roll up the dough from the longest side and cut the log into equal pieces.
Place the rolls onto a lined baking tin and allow to rise until double in size again.
Preheat the oven to 180C and bake the rolls for 25-30 minutes until golden brown.
Once baked, allow to cool and dollop with the Bliss frosting.

Chefs Tip: You can double the indulgence in this recipe by using it in the batter as well as a serving suggestion with your sweet rolls.
