Clover Almond Croissant Flavoured Brioche Bread

Cooking time: 15 minutes

Ingredients:

  • 1 loaf brioche bread
  • 1 cup sugar
  • 1 cup water
  • Frangipane:
  • 85g Clover Springbok Unsalted Butter, room temperature
  • 80g sugar
  • 2 large eggs
  • 1 tsp vanilla essence
  • ½ tsp almond essence
  • 1 ¼ cup almond flour
  • ¼ tsp salt
  • To serve:
  • Icing sugar
  • Almonds

How To Make Almond Croissant Flavoured Brioche Bread

  1. Preheat oven to 180°C. Place butter into a large mixing bowl, add in sugar and beat using an electric hand mixer until pale and fluffy.
  2. Then beat in eggs one at a time waiting until the first one is completely incorporated before adding the second egg.
  3. Then beat in vanilla and almond essence, lastly fold in almond flour and salt until well combined.
  4. Meanwhile prepare the syrup by placing sugar and water into a saucepan over medium heat, then bring to a boil stirring until the sugar has dissolved.
  5. Remove from the heat and set aside.
  6. Slice brioche and place onto a lined baking tray, brush each slice of bread with simple syrup then spoon ¼ cup of frangipane onto each slice, top with chopped almonds and bake for 5 – 6 minutes until golden brown.
  7. Serve immediately and garnish with a dusting of icing sugar, Enjoy!
