Clover Authentikos Pulled chicken and Sweet potato slider

A pulled slider of any kind is a fave on any day. But with the new year, new you, giving the much loved slider a healthy makeover with our sweet potato pulled chicken sliders.

Serves: 3-4
Time: 30 minutes

Ingredients:

2 sweet potatoes, cut into 1.5cm round discs
2 Skin & boneless chicken breast fillets
1/2 Cup Clover Authentikos plain Greek yoghurt
1/3 Cup Mayonnaise
1/2 small red onion, finely diced
2 Tbsp tomato paste
3 Tbsp olive oil
2 Tbsp dried oregano

Method:

Cut the chicken breast in half to make the meat thinner. Then add the yoghurt, tomato paste and oregano, season to taste. Allow the chicken to marinade for a minimum of 30min or overnight.
Preheat the oven to 180C.
Place the sweet potato discs onto a lined baking tray, drizzle with salt and pepper and place into the oven to bake for 25-30 minutes until cooked through and starts to turn golden brown.
Bring a griddle pan to a high heat and cook the chicken for 8-10 minutes until cooked through. Using two forks, shred up the chicken and add to a mixing bowl. Add some mayonnaise and mix to combine.
Top half the bases of the cooked sweet potato with some chicken filling and some chopped red onion. Top with remaining the remaining sweet potato disks and serve.

Chefs Tip: Cutting the meat in half allows for more marinade to season and flavor the meat.
