Clover Bliss Mini Spiced Tuna Flatbreads

Spiced tuna flatbreads make for a delectable lunch or even dinner idea and is so easy to put together.

For the flatbreads
4-5 mini flatbreads
1 tin chunky tuna, drained
1 tsp chilli powder
1 tsp ground coriander
1 tsp paprika
1 tbsp olive oil
½ red onion, finely sliced
1 cup baby spinach
Handful fresh coriander

For the mint yoghurt
1 cup Clover Bliss double cream yoghurt
4 springs fresh mint, chopped
1 green chilli, chopped
1 tsp ground cumin
Salt and pepper to taste
Juice and zest of 1 lime

Fresh avo, for topping
Sliced red chili for garnish


Place the tuna into a mixing bowl and sprinkle over the chilli powder, ground coriander, paprika, olive oil and season with salt and pepper. Toss together.

Make the mint sauce by combining the Clover Bliss double cream yoghurt, mint, ground cumin, chilli, salt, pepper, juice and zest of 1 lime. You can mix by hand or blend together

Assemble the flatbreads by adding a dollop of the mint sauce to the base, top with spinach, tuna, red onion, fresh coriander and more mint sauce. Garnish with avo and red chilli to serve.

Chefs Tip:  You can use fresh fish or chicken for this recipe and cook accordingly, with the same spices.
