Clover Bliss Shawarma Tarts

Robust and flavourful Shawarma’s at home beats takeout any day of the week and makes for a great weekend delight.

Serves: 4-6

Ingredients:

1 sheet puff pastry
Egg wash for brushing
x1 beef or lamb steak
1 tsp ground cumin
1 tsp ground coriander
1 tsp paprika
1 tsp turmeric
1 tsp ground cinnamon
1 tsp cayenne pepper
Salt and pepper to taste
1 onion, thinly sliced
1 tomato, chopped
½ cucumber, chopped or shaved into ribbons
Handful fresh parsley, chopped
Clover Bliss Double Cream yoghurt to serve
Pomegranate seeds for garnish

Method:

Preheat the oven to 180C.
Prepare the puff pastry shells by cutting the pastry into squares and score the edges leaving room away from the edges. Brush with egg wash and bake in the oven for 15-20 minutes. Press down the puffed up centers and set aside.
Prepare the steak by mixing the spices in a bowl and season with salt and pepper.
Rub the spice mixture over the steak and heat a glug of oil in a pan. Sear the steak and add in the onion. Cook the steak to your liking and allow the onions to cook until golden in colour. Once the steak is cooked and rested, thinly slice.
Assemble the tarts by adding a dollop of Clover Bliss Double cream yoghurt to the cooled pastries. Top with cucumber, tomatoes, steak slices, and garnish with fresh parsley and pomegranate seeds.

Chefs Tip: For the best result, allow the meat to absorb the flavours overnight by adding the rub the night before.
