Clover Nolac Peppermint Chocolate Waffles

Minty and chocolate flavour on a waffle is a delicious dessert to enjoy in the comfort of your home.

2 1/2 cup flour
1 tsp baking powder
50g sugar
1/2 tsp salt
1 l/2 cups Clover Nolac milk
1/4 cup margarine, melted
1tsp vanilla essence
2 eggs
1 peppermint slab finely chopped

1/2 tin caramel
1 cup Clover Nolac dairy snack, plain
Peppermint chocolate chopped


Pre – heat a nonstick waffle iron
Sift all the dry ingredients into a large bowl, in a separate bowl combine the egg yolks, Clover Nolac milk, vanilla essence, melted margarine and chopped chocolate. Mix the wet ingredients into the dry ingredients to form a smooth batter. Whisk the egg whites in a separate bowl and fold through the batter, this will give you a light airy waffles. Spoon the batter into a greased waffle iron, do not overfill. Cook for about 4 minutes until golden and cooked through.
For the filling, in a large bowl, smooth out the caramel and fold through the dairy snack. To assemble place the waffles onto your serving plate and spoon over your filling, finishing off with some chopped peppermint chocolate.

Chefs Tip: You can make the waffles ahead and store them in the freezer. Simply heat them up when ready to eat.
