Clover Butro Spinach Stuffed Fish Pinwheels
At any festive table, a roast will always be present. And if you wanting to try something a little different. Spinach Fish pinwheels is one to consider and is great for sharing.

Ingredients:
2 salmon fish fillets, sliced lengthways (like butterfly)
1 tbsp Clover Butro
2-3 cups baby spinach
1 clove garlic, chopped
1 tbsp Cajun spice
1 tbsp lemon juice
Salt and lemon pepper to taste
½ cup cream cheese
Melted Clover Butro
Lemon slices
Toothpicks
Creamy mash potato for serving
Method:
Preheat the oven to 180C.
Melt the Clover Butro in a large pan and add in the spinach and garlic. Season with the Cajun spice , lemon juice, salt and pepper.
Cook until the spinach is wilted. Allow to cool and mix with the cream cheese. Place the filling onto the fish fillet and roll up. Season the fish with more Cajun seasoning, salt and pepper and drizzle with melted Clover Butro. Secure with toothpic.
Place lemon slices onto a baking tray and place fish on top. Bake in the oven for 7-10 minutes, until the fish is cooked through.
Serve with creamy mash and a drizzle of pan juices
Chefs Tip: You could use any fish that you are able to roll up.
