Clover Classic Avo and Lemon Loaf Cake

Creamy avocado  would be perfectly smooth with a lemon flavour.

Ingredients:

X2 avocados, cubed
100g ground almonds
1 cup flour
200g castor sugar
Juice and zest of 2 lemons
3 eggs, beaten
½ cup Clover Classic dairy snack, vanilla flavour
1 tsp baking powder
½ tsp bicarbonate of soda
1 tbsp poppyseeds

For the glaze
1 cup Clover Classic dairy snack, vanilla flavour
300g icing sugar
Squeeze of lemon
Lemon peel for garnish
Poppy seeds for garnish

Method:

Preheat the oven to 180C.
Place the avo, ground almonds and sugar into a blender and blend until you have a thick green paste.
Transfer to a bowl and add in the lemon juice and zest. Add eggs one at a time, stirring in between and stir in the Clover Classic dairy snack. Stir through the flour, baking powder, bicarb and poppy seeds. Pour the batter into a greased and lined loaf tin and bake for 35-40 minutes until baked through and a skewer comes out clean.

Prepare the glaze by whisking the glaze ingredients together. Once the loaf has cooled, drizzle over and garnish with lemon peel and poppy seeds.

Chefs Tip: The use of lemon and vanilla counterbalances the flavours – you won’t taste the avo!
