Clover Classic Baked Sage Chicken Meatballs
Healthy dinners don’t have to be dull! chicken meatballs served with brown rice and creamy classic sauce make for a satisfying meal to help keep your health on track – but in a delicious way.

Ingredients:
For the meatballs
500g chicken mince or 3-4 chicken breast, minced
½ cup breadcrumbs
2 cloves garlic, chopped
½ tsp chilli flakes
¼ cup grated parmesan cheese
2 tbsp fresh sage, chopped
1 tbsp fresh parsley, chopped
Salt and pepper to taste
2 tbsp Clover Classic fat spread
For the sauce
1 tbsp Clover Classic fat spread
1 shallot, chopped
1 cup cream
½ cup chicken stock
A few fresh sage leaves
1 clove garlic, chopped
Salt and pepper to taste
½ grated parmesan
For serving
Cooked brown rice
Method:
Prepare the meatballs by combining the minced chicken, breadcrumbs, garlic, chilli flakes, parmesan, sage and season with salt and pepper. Roll into meatballs and melt Clover Classic fat spread in a large pan. Cook the meatballs until browned and set aside.
In the same pan, melt more Clover Classic fat spread to make the sauce. Add in the chopped shallot and cook for a few minutes. Pour in the cream, chicken stock, sage leaves, garlic and season to taste. Transfer to an oven friendly dish. Pour in the sauce and sdd in the meatballs and grate over the parmesan. Bake in the oven for 10-15 minutes until the meatballs are cooked through. Serve warm with brown rice.
Chefs Tip: You can add veg like sautéed spinach and greens to the meal to increase your veg intake.
