Buttermilk Fried Chicken Tenders with Spicy Mayo Recipe
Juicy on the inside and crisped to perfection on the outside, these are best served with a spicy tangy mayo dip, this recipe is worth repeating!

Ingredients:
- 3 chicken breasts sliced vertically into 3
- 2 cups of flour
- ½ cup corn starch
- 1 tsp paprika
- 1 tsp oregano/ mixed herbs
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 2 cups of buttermilk
- ½ cup hot sauce
- Oil to fry
- For the spicy mayo
- 1 ½ cup Clover Classic Mayo number 2
- 1 garlic clove
- 3 bird’s eye chillis
- 1 lemon juiced
- 2 tbsp parsley chopped
- Salt and pepper to taste
- Serve with skinny cut fries
How To Make Buttermilk Fried Chicken Tenders with Spicy Mayo
- In a large bowl combine the buttermilk, hot sauce, chicken, mix until the chicken is thoroughly coated and marinate it for at least 2 hours, best overnight.
- Pre-heat the oil in a pot over a medium high heat. In a bowl combine the flours, seasonings and spices.
- Take one chicken tender, shake off any excess buttermilk mixture and coat the chicken tender in the flour mixture.
- Repeat the coating process for a crispier chicken tender. Place the chicken tender into the oil and cook until golden in colour/ until the chicken is fully cooked and serve with the spicy mayo.
- For the spicy mayo combine the parsley, chili, lemon juice, garlic and clover mayo in a blender and blend until smooth, season with salt and pepper.
Chefs Tip: Double dredge the chicken, it will be clumpy but the clumpier the crispier the coating will be.
