Peruvian Chicken Recipe

If roast chicken is on the menu, this recipe is one for the books!

  • X1 pack chicken drums and thighs
  • 2 cloves garlic
  • 1/3 cup soy sauce
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • 2 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp dried oregan
  • Salt and pepper to taste
  • For the green sauce
  • 3 jalapenos
  • 1 cup fresh coriander/Parsley
  • 2 spring onions,chopped
  • ¼ cup mayo
  • ½ cup Clover Classic dairy snack, plain flavour
  • Squeeze of lime
  • Salt and pepper to taste
  • Fresh rocket for serving

How To Make Peruvian Chicken Recipe 

  1. Blend together the olive oil, lime juice, soy sauce, spices and season with salt and pepper.
  2. Pour over the chicken and allow to marinate for at least 20 minutes.
  3. Grill in the oven at 180C for 30-35 minutes, or until the chicken is cooked through.
  4. You can also use the airfryer at 180C.
  5. In a bowl, combine the ingredients for the green sauce and pour over the chicken.
  6. Serve with fresh rocket or salad.
