Kick up your roasted spuds with a burst of flavour and the ultimate creamy, tangy dip to accompany them! Za’tar roasted potatoes make for a tasty side for your dinner or simply enjoy them on its own.
1kg baby potatoes par boiled 1/2 sunflower oil 2 tsp zat’ar Black pepper and sea salt to taste
For the dressing 1 cup Clover Classic mayo number 3 1/2 tsp zat’ar spice 1/2 tsp chilli flakes 1)2 cup coriander finely chopped 1/2 tsp cumin 2 tbsp finely chopped spring onion 1/2 lemon juiced 1 garlic clove minced Salt and pepper to taste
Method:
Pre heat oven to 190°C. Place the par-boiled potatoes in a deep oven proof dish, season with salt, pepper and Zat’ar spice, drizzle with oil and bake for 40-60 minutes until golden and crispy. For the dip, combine all the ingredients in a bowl season with salt and pepper to taste and serve with the crispy roasted potatoes.
Chefs Tip: Za’tar is a fragrant Middle Eastern mix that includes herbs and sesame seeds as well as other spices.
