Clover Elite Cheese and Samp Arancini

A truly South African twist!

Serves: 4-5

2-3 cups cooked samp and beans
½ cup Clover Tussers cheese, grated
½ cup Clover Cheddar cheese, grated
1 tsp garlic powder
1 tbsp dried mixed herbs
1 tsp cayenne pepper
Salt and pepper to taste
1 cup seasoned flour
2 eggs, beaten
2 cups herb seasoned panko breadcrumbs crumbs
Oil for frying

Sauce for serving


In a large mixing bowl, combine the cooked samp and beans, cheese, garlic powder, mixed herbs, cayenne pepper and season with salt and pepper.
Take some mixture and roll into balls. Dip the balls into the seasoned flour, then the egg and roll into the panko crumbs until coated. Heat the oil and fry the arancini until golden brown. Serve with a sauce of choic.

Chefs Tip: If the samp mixture is a bit too dry, add a dash of water and then roll into balls. Also oil your hands to prevent the sticky mixture sticking to your hands
