Clover Elite Cheese Brioche Centrepiece
With the gathering of family and friends this festive season, entertainment should be made easy. Nothing beats those special moments than the breaking of bread together.

Ingredients:
2 eggs
200ml milk, warmed
350g white bread flour
1 ½ tbsp yeast
1 ½ tbsp. castor sugar
Pinch of salt
100g butter, softened
200g Clover Elite cheddar cheese, cut into small cubes.
1 tbsp rosemary, dried or freshly chopped
Eggwash for brushing
For decoration
Rosemary sprigs
Sauce for serving
Method:
In a jug, whisk together the eggs, milk.
In a large mixing bowl, mix together the flour, yeast, sugar and salt and stir to combine. Slowly pour the egg mixture into the flour mixture and incorporate to form a soft dough. Add the butter little bits at a time and knead for 8-10 minutes. Allow to rest for 20 minutes – 30 minutes.
Place the dough onto a floured surface and tear off pieces. Flatten out the piece of dough and place a cheese cube in the centre. Roll up into a ball and continue with the rest of the dough.
Place an oven proof bowl in the centre of a lined baking sheet and place the bread dough balls around the bowl, almost creating a wreath. Cover and allow to proof until doubled in size. Brush with egg wash before baking in a preheated oven at 170C for 15-20 minutes until golden brown. Serve with sauce and decorate with rosemary sprigs
Chefs Tip: You can serve this as a side dish with scattering Clover Elite Feta, of course!
