Asian chicken bao bun Recipe

Ingredients:
- CHICKEN MARINADE:
- 600g boneless skinless thighs sliced into bite-size chunks
- 1 cup fruit of the forest apricot yoghurt
- 1tsp salt
- 2 tsp crushed black pepper
- ½ tsp garlic salt
- 1tsp barbecue spice
- 3 pinches chilli explosion spice
- COATING:
- 1 1/2 cups self-raising flour
- 1 tsp salt
- 1 1/2 tsp crushed black pepper
- 1 1/2 tsp garlic salt
- 1 tsp paprika
- 1 tsp chilli explosion spice
- vegetable oil for deep frying
- ASIAN SAUCE:
- 3 tbsp gochujang paste
- 2 tbsp golden syrup
- 4 tbsp brown sugar
- 5 tbsp soy sauce
- 2 tsp minced fresh garlic
- 2 tsp minced fresh ginger
- 1 tbsp vegetable oil
- 1 tbsp sesame oil
- BAO BUNS:
- Fill medium sized pot one third with water and bring to the boil
- Place bamboo steamer on top of pot
- Steam bao’s in bamboo steamer for 8-10 minutes
How To Make Asian chicken bao bun
- Deep fry chicken fillets until golden and crisp on the outside but not overdone and set aside
- Cook Asian sauce on the stove until cooked through on medium heat.
- Coat chicken fillets with Asian sauce in a flat pan
- Fill steamed bao with Asian chicken filling
- Garnish with a few small thin slices of red onion, cleaned coriander leaves, finely chopped spring onion and sprinkle with blak and white sesame seeds.
Ingredients:
- 1 mango, peeled
- 1 cup Fruits of the forest, granadilla flavour
- 1 granadilla, pulp scooped out
- Salted caramel chocolate shavings
How To Make Mango Granadilla Parfait
- Remove the mango peel and cut the flesh from the pit.
- Purée the mango flesh in a food processor until smooth and set aside.
- Layer a few spoons of mango purée and a few spoons of Fruits of the Forest in a glass. Repeat until the glass is full.
- Top with fresh granadilla pulp and chill in the fridge
- Top with salted caramel shavings before servings
Ingredients:
- 2 cups Fruits of the Forest, strawberry/mixed berry flavour
- 10 ice cubes
- Handful Fresh blueberries
- Granola mix to garnish
How To Make Mixed Berry smoothie
- Add Fruits of the Forest, blueberries and ice to a blender
- Blend until smooth and pour into small glasses
- Chill in the fridge
- Top each glass with granola mix and a single blueberry on each
