Clover Nolac Baked Spinach Breakfast Tortilla

Spinach tortilla can be prepped the night before and get you on the go and still enjoy delicious breakfast.

Serves: 2-4

Ingredients:

1 large tortilla
2 handfuls baby spinach
1 small red onion, finely chopped
1 tbsp dill, chopped
3 eggs
2 tbsp Nolac Milk
Salt and pepper to taste
Handful Lactose free cheese, grated

Clover Nolac dairy snack, plain flavour, for serving

Method:

Heat a glug of oil in a saucepan and sauté the onion until translucent. Add in the baby spinach until wilted and remove from heat. Season with salt and pepper to taste.
Place the tortilla into a dish with edges coming up the sides. Add in the eggs and Nolac milk. Season with salt and pepper and spread out the Spinach mixture. Scatter over the cheese and bake for 15-20 minutes in a preheated oven at 180C. Serve warm with a dollop of Clover Nolac Dairy snack.

Chefs Tip: Assemble the veggies the night before. All you have to do in the morning is add the eggs and Nolac milk.
