Clover Nolac Gingerbread Muffins

A favourite festive snakc!

2 cups of flour
1 tsp baking powder
1/2 cup of white sugar
1 tbsp ginger powder
1/4 tsp cinnamon
Pinch of salt
2 eggs
1 tsp caramel essence
1/2 cup oil
3/4 cup Clover Nolac milk

For the glaze
1/4 cup Clover Nolac dairy snack
1 cup icing sugar
1 tbsp vanilla paste

Candied ginger for topping


Pre-heat the oven to 180 °C
In a large bowl combine all the wet ingredients and in a seperate bowl sift the dry ingredients. Add it into the wet ingredients, mix until a smooth batter is formed. Equally divide into a greased muffin tray and bake for 15-20 minutes or until a skewer comes out clean. While the muffins are baking make the glaze by mixing the ingredients in a bowl until smooth. Once the muffins are cooked. Allow to cool before diping into the glaze, decorate with candied ginger pieces.

Chefs Tip: Be careful not to overmix your muffin batter
